[eduVPN-deploy] CentOS 8 support?

I'm used to work with remi, and we are also starting from scratch and
not in production yet.

I.e. I would be a good guinea pig :-)

So, if you don't foresee major issues with it, I'd go ahead and install
EPEL+remi. The version to use is then PHP 7.3?
